Breakfast stuffed sweet potato

Sweet potatoes are a nutritional powerhouse full with potassium and vitamin C and with tons of fiber. A great choice to start your morning, you will be satisfied for hours!

Ingredients:

1 sweet potato (small)

Cinnamon (to preference)

1 Tbsp. Honey or Agave

2 Tbsp. pumpkin or pepito seeds

Directions:

Either slice sweet potato into medallions (rounds) or poke holes in whole sweet potato with a fork and cover with foil. Bake on 375 degrees for about 12 minutes (rounds) or 20-25 minutes (whole) or until tender to a fork. Top warm sweet potato with preferred toppings and enjoy.
