DIY Burrito Bowls
Ever feel like a short order cook at your house? This build your own burrito bowl bar helps everyone get exactly what they want! Ingredients are packed with fiber, protein and flavor to please even the pickiest or eaters.
Bean mixture:
2 Tbsp of Vegetable stock (more as needed)
2 Tbsp or 2 garlic cloves, finely diced
1/2 red pepper, diced
1 jalapeño, seeds removed and finely minced
1/2 medium sized zucchini diced or cut into half moons
1 can Fire roasted diced tomatoes with juices
1 can corn
1 can black beans
2 Tbsp finely chopped fresh cilantro (or cilantro paste)
2 Tbsp chili powder
2 Tbsp ground cumin
Juice of 1/2 a lime, lime zest
Instructions:
Heat the vegetable stock in a saucepan then add garlic, red pepper and jalapeno. Sautee over medium heat for 2-3 minutes, then add the zucchini and cook for another 5 minutes. Add beans, corn, diced tomatoes and cook for 5 minutes, add spices and fresh lime juice and cook until juices have reduced and mixture is soft. Add to serving dish.
Serve along side:
Quinoa or Rice
Avocado
Lime wedges, fresh cilantro
Corn (roasted or warmed through)
