Fresh Shaved Asparagus & Caramelized Onion Salad

1 bunch of fresh asparagus, ends trimmed

1 red pepper, cut into matchsticks 

1 large red onion

2 lemons

2 Tbsp extra-virgin olive oil or avocado oil

1 Tbsp agave or maple syrup

1 Tbsp Dijon Mustard

2 Tbsp minced white onion or shallot

1/4 tsp. kosher salt

1/4 tsp. fresh ground black pepper

1/4 cup of shaved almonds

 

Slice red onion into 1/2 inch rounds and add to pan on medium heat with 1 Tbsp of olive oil. Stirring occasionally until onion has browned and has started to become crispy around the edges. 

While the onions are cooking, prepare asparagus with a vegetable peeler, dragging the peeler lengthwise to create ribbons. Add to bowl with red pepper that has been cut into matchsticks. 

Prepare dressing by zesting 1 lemon and adding the juice of 2 lemons, the agave, oil and Dijon mustard with salt and pepper to a jar or dressing container. Shake well. 

Top asparagus with warm onions and dressing. Sprinkle with shaved almonds and serve right away. Also great if you let sit in the fridge, it gets even better!
