Jalapeno Black Bean Burger Power Bowls

Fresh greens with corn, tomatoes, and avocado topped with protein-packed jalapeno quinoa and black bean burger and a side of Mexican crema.

PRODUCE:

1 cup peeled, chopped butternut squash (fresh or frozen)

1 red pepper, diced small

1 jalapeño, seeded and minced

1 small yellow onion, minced

4 cloves of garlic

4 limes (or container of lime juice)

2 ripe avocados, sliced

2 cups grape tomatoes, sliced in half

2 heads of butter lettuce

 

PANTRY ITEMS:

1 can of black beans, drained and rinsed

1 can crisp corn (low sodium)

2 Tbsp. Olive Oil

1 cup raw cashews, soaked overnight or in boiling water for 20 minutes

1 Chipotle pepper (canned- packed in adobo sauce)

1 cup cooked quinoa (I like Suzie's Quinoa with Olive Oil)

1 tbsp agave or maple syrup

SPICES:

1 1/4 Tbsp Chili Powder

1 1/2 teaspoon ground cumin

1 1/2 teaspoon ground paprika

1/2 cup of chopped cilantro or cilantro paste

Preheat oven to 425 degrees and use a paper towel to spread a small amount of olive oil onto a cooling rack, then place cooking rack on top of a baking sheet and set aside. 

Burgers:

Mash black beans and butternut squash together in a large bowl, once combined add quinoa, 1/2 small jalapeño, and 1/4 cup chopped cilantro and mix. Next add onion, 1 tsp cumin, 1 tsp chili powder, and paprika, and juice of 1/2 lime and mix until everything is combined evenly. 

Use a 1/4 cup measuring cup to scoop mixture out, then place in hand to form patties. Place onto a cooling rack that is placed on top of a baking sheet, mixture should form 8-10 patties.

Bake for 20-25 minutes or until burgers have started to brown and are cooked through. Use a spatula to remove from the cooking rack and place on top of butter lettuce, grape tomatoes, red pepper, diced avocado, and corn then and add a spoonful of Chipotle Crema 

Cilantro Avocado and Lime Dressing:

Add 1/2 Avocado, 1 clove of garlic, juice of 2 limes, 1/2 tsp cumin and 1/2 tsp chili powder, and 1/4 cup chopped cilantro into a food processor, blender, or nutra bullet and mix until smooth.
