Nectarine & Honey Breakfast Salad
Makes 2 servings:
1/2 Large Nectarine or 1 small Nectarine
1 Lemon (Juiced)
1 Tsp of Honey
1 cup cooked (warm) Quinoa
2 cups fresh Spinach
1/4 cup fresh Basil (cut into ribbons)
1/2 cup chopped Cashews
Cook Quinoa according to instructions (I used Trader Joe's already cooked/frozen quinoa and heated it up in the microwave).
Mix dressing by squeezing juice of 1 lemon into a small bowl with 1 tsp of honey and 1/4 cup of basil. Mix well and set aside.
Assemble personal salads:
In each bowl place 1 cup fresh spinach in the bottom, top with 1/2 cup warm Quinoa, 1/4 of nectarine and 1/4 cup of chopped cashews, top with half of dressing mixture.
Making for just one? This is even better the next morning reheated!
