So tonight....I made a vegetarian cheese

Portabella Cheese "Steaks"

Serves 4

3 peppers (I used red, yellow and orange but green works here too) sliced into strips

2 cloves of garlic, minced

1 large yellow onion, sliced into strips

12 baby bella mushrooms or 5 large portabella mushrooms sliced into strips

2 Tbsp olive oil

1/2 cup vegetable broth

3 Tbsp soy sauce

2 Tbsp Montreal Steak Seasoning 

4 club rolls

4 slices of provolone cheese 

Heat 2 Tbsp olive oil over medium-high heat. Meanwhile slice peppers, onions and mushrooms into similar sized strips so they cook evenly. Add to hot pan and cook for 5 minutes, then add broth, soy sauce and Montreal steak seasoning and continue to cook on medium-high heat for 15 minutes or until sauce reduces and starts to thicken, stirring occasionally.

Place provolone on roll and toast, fill with peppers, onion and portabella mixture. Enjoy!
