Meatless Mondays with Mini Curry Chick Pea Burgers

Kids love these mini burgers all set for toppings galore

If living a plant forward lifestyle is something you are working towards, this meal is a must add!


Look at plant forward eating as a journey, a progression and avoid having a "on" or "off" mentality. Instead, start by adding one meatless meal a week, if your already doing that, then switch to two, then three or make one meal plant based daily.


There are many ways to start healthy habits, but in order for them to stick the have to be REALISTIC and tie them to your values and goals. Abrupt changes and strict rules to eating can impact you and your families view of food and food can begin lose its value, its purpose and our relationship with it can be damaged. Keeping a healthy view on why eating plant forward is important and what it does for our bodies is a great way to start your family on the journey with you.


Now.....to the burgers!


These burgers are a hit with kids not only because they are mini (so cute!) but because they can basically make them from start to finish with just a little help. Using a versatile machine like a food processor reduces the need for knives and makes clean up a breeze (mom win!).


These burgers are a canvas for whatever flavors and toppings you like...think corn salsa for a Mexican flair or Asian slaw or Kimchi (a mommy favorite), how about a Greek burger with dill yogurt dressing? Or keep it simple with ketchup and pickles .....the possibilities are endless.


Ingredients:

1 can of chick peas

1 cup of whole wheat panko bread crumbs

1 small white onion

2 garlic cloves

1 Tbsp of Tahini

3 Tbsp of ground flax

1 Tbsp of water

Large bunch of mint and parsley

1 tsp curry powder (add more if you like it really spicy)

1 tsp ground black pepper

1 tsp of salt

Juice of 1 lemon


Instructions:

Open and drain one can of chick peas and place into food processor, add bread crumbs, onion, garlic, Tahini, mint, parsley and spices. Place ground flax and water into a small separate bowl and whisk with fork, let sit for 3-5 minutes until forms a loose gel (similar to egg white) and then add to the food processor with the other ingredients. Squeeze juice of one lemon in with everything and pulse until smooth consistency.


Use a 1/4 cup measuring cup to scoop out mixture and form into patties. Place on baking plan with liner (should make about 8 patties). Bake on 375 for 10 minutes and then flip using a spatula. Bake another 5-10 minutes until the outsides are browned and the middle is firm.


Use small slider buns or mini pita (featured here) and top with your topping of choice (featured here, grape tomatoes and spinach dressed with lemon vinaigrette).


Makes for a great party appetizer on its own or make it into a meal with a side salad and some homemade baked french fries. Enjoy!
