Red Pepper Romesco Sauce
2 roasted red bell peppers (or 1 cup jarred roasted red peppers)
1/4 cup sliced almonds (raw)
1 Tbsp tomato paste
1 Tbsp red wine vinegar
1 garlic clove
1 Tbsp olive oil
2 and 1/2 Tbsp water
1/2 teaspoon smoked paprika
1/4 tsp salt
Add all ingredients to a food processor or blender and pulse until smooth.
Delish served cold or room temp as a dip or spread or warm up and top pasta.
