Tofu Scramble

Getting one serving of vegetables by 9 am…yeah I would say that is starting your morning on the right foot. Dark green leafy vegetables are good sources of calcium so no need for that morning cup of milk and bright, colorful peppers and tumeric will load you up on  phytonutrients so you are ready to kick the day’s (and free radical’s) butt.

Ingredients:

1 package firm tofu 8 oz.

1/2 tsp turmeric

1/4 tsp red pepper flakes or everything but the
bagel seasoning

1/2 white onion

1 cup raw or frozen spinach

 

 

Directions:

Sautee onion and spinach in frying pan with either vegetable stock or olive oil until cooked through then add crumbled tofu and then seasonings, heat through. Add on top of your favorite bread or try sour dough, Ezekiel bread, 1/2 bagel or gluten free options if needed.

Note: add any additional vegetables you have on hand and top with avocado if available.
