Watermelon Poke Bowls

This healthy vegan, plant based recipe is bursting with flavor and has quickly become a family favorite. Providing customizable options for everyone's taste, building these bowls is not only fun, it is a nourishing experience.

Poke Bowl ingredients (yields 4 servings):

1 package of cooked riced cauliflower

2 cups cooked brown rice

2 cups 1 inch cubed watermelon

1 Avocado, sliced

3 cups carrot matchsticks

1 cucumber, sliced

3 cups arugula (or microgreens)

1/2 cup peanuts

Divide ingredients evenly into 4 bowls, top with sauce

Sauce ingredients:

1/4 cup peanut butter (or soaked cashews drained)

2 Tbsp Soy Sauce

2 Tbsp Rice Vinegar

2 Tbsp sesame oil

1 Tbsp Sriracha

2 Tbsp fresh ginger (or frozen minced)

1 clove garlic

Juice of 1 lime

Instructions:

1. Cook raw or frozen rice according to package instructions.

2. Cook cauliflower rice on stove top, covered on medium heat or frozen cauliflower rice according to package instructions.

3. Dice watermelon into 1 inch cubes

4. Slice cucumber and carrots into matchsticks

For Sauce:

Add all ingredients to a blender, blend until smooth (keeps in fridge for up to a week)

Assemble bowls:

1/2 cup rice

1/2 cup watermelon

1 cup arugula or microgreens

1/4 cup cucumber and carrots

Top with sliced avocado and peanuts and drizzle sauce
